A family connection from market floor to sushi counter.
Every morning, Koichi Kizaki walks the Nagahama Fish Market in southern Japan, selecting fish for his brothers' Denver restaurants. Within an hour of purchase, the catch is cleaned, vacuum-packed and on its way to Colorado.
“At first, it looked very chaotic, however as time went by, I could see a perfect rhythm and harmony in what happens there.”
Four decades after opening on Christmas Eve 1984, the standard remains personal.
