Chef's Table takes place at the counter in Sushi Den's private room, in front of your chef. Two guests are seated each hour for a dinner lasting two hours.
Chef's Table is meant for adult “foodies” who are open to all types of dishes and trying new things. Your private chef selects the best of the daily catch and tailors your individual menu, taking your requests into consideration while introducing you to new varieties of fish. This style of dining is called Okonomi. Sake pairing curated by your chef is also possible.
Chef's Table will be ‘Gone Fishing’ from September 2–8, 2026.

How the evening works.
- Seating
- Two guests per hour at the sushi counter inside the Sushi Den private room, for a dinner lasting two hours.
- Menu
- Premier sushi and sashimi from freshly caught raw fish handpicked at the Nagahama Fish Market in southern Japan and other markets worldwide. Some cooked courses may be included.
- Pricing
- Due to fluctuations in fish-market prices, the price is anticipated to start at $150+ per person without drinks, gratuity and tax. Price may vary with your preferences and the quantity of fish, and is subject to change without notice.
- Dietary restrictions
- Unfortunately we are not in a position to accommodate gluten-free, vegetarian or vegan focused menus due to the nature of Japanese cuisine. We DO observe food allergies and request that you let us know at booking.
- Confirmation
- We reply to your registration form to confirm your requested date is still available. It is not considered a reservation until we expressly confirm the date and time with you.
- Check-in
- Check in at the host stand at Sushi Den and you will be escorted to the private room. With a confirmed reservation there is no need to wait in the check-in line. Please check in promptly — two hours are allocated to each time slot.
